How to Make Caipirinha: Brazil’s Classic Sugar Cane Cocktail

The caipirinha is Brazil’s most famous cocktail and one of the simplest: lime, sugar, and cachaça over a lot of ice. It turns up everywhere, from beach kiosks to family birthdays, and it takes about two minutes to make.

Cachaça is what makes it specific. Sometimes called Brazilian rum, it’s distilled from fresh sugar cane juice rather than molasses, and it has a character no other spirit quite matches.

You can drink one on its own perfectly happily. It’s at its best next to feijoada, the black bean stew at the center of Brazilian cooking, where the acidity does something the food genuinely needs.

What you’ll need

Four ingredients and a sturdy glass. If cachaça is impossible to find where you are, vodka makes a caipivodka, which Brazilians drink too and nobody objects to.

  • 2 tablespoons sugar, or to taste
  • 2 oz cachaça (Brazilian sugar cane liquor)
  • Ice cubes
  • Optional: a cocktail shaker

Cachaça is often sold under brand names such as 51 or Salinas. Depending on where you live, Brazilian or Portuguese grocery stores are the likeliest place to find it. Vodka is a perfectly good fallback.

Step by step

  1. Prepare the glass. Put the lime wedges into a sturdy glass. Thin glass and muddling don’t mix.
  2. Add the sugar. Straight over the lime.
  3. Muddle. Press the lime and sugar together with a muddler or the back of a spoon. Firm, not violent: you want the juice and the oils from the peel, not the bitterness from the pith.
  4. Fill with ice. Generously. A caipirinha that isn’t cold isn’t finished.
  5. Pour the cachaça. Or the vodka, if that’s the version you’re making.
  6. Stir well to bring it together. With a shaker, a few gentle shakes does it.
  7. Serve. An extra lime wedge if you want one. Drink responsibly.

Tips and variations

Brown sugar instead of white gives a deeper, more caramel note. Worth trying once you know the standard version.

Other fruit works, though lime is the traditional one. Strawberry, passion fruit and kiwi all make good caipirinhas, and passion fruit in particular is common in Brazil.

Sweetness is adjustable. An extra spoonful if you like it softer, less if you want the lime sharper. Brazilians vary this more than any other part of the recipe, which is why the recipe says or to taste.

Use a heavy glass and be generous with the ice. Both matter more than they sound like they should.

These are strong. Two ounces of cachaça in a small glass adds up faster than the lime suggests. Take your time.

Why it goes with feijoada

The pairing isn’t arbitrary. Feijoada is rich, salty and slow, and it sits heavily by design. The caipirinha is bright and sharp, and it resets your palate between mouthfuls the same way the orange slices on the plate do.

It’s the reason both turn up at the same table on a Saturday afternoon, and why serving one without the other feels incomplete to anyone who grew up with it.
